*Tannins are a significant category of polyphenolic compounds that have a characteristic bitter taste and are abundantly found in nature. They are very often found in the fruits of many plant species, especially oak and chestnut species, in the bark of false acacia, in tea, etc. They are also found in the roots, bark, fruits, and leaves of tropical species such as Acacia and Quebracho. In the species Schinopsis balansae, up to 25% of their woods can consist of valuable tannins. These substances have been known to humans since ancient times (ancient Egypt, Greece, and China). Today, they have abundant uses. They have the property of preventing the decay (rotting) of leather and are widely used in tanning, pharmaceuticals for medicine preparation, and ink making. White oak contains abundant tannins. However, their most well-known application use is in wooden oak barrels, where during wine aging, beneficial wood substances, including so-called enological tannins, are hydrolyzed at a slow rate and extracted into red wine.
